CAPER TARTARE
Caper Tartare
Dietary: Gluten Free, Vegan Option
Makes: approx 100ml
Ingredients:
- 2 tbsp Capers (and a few caper berries if you can get them) 
- 20g Cornichons or gherkins 
- 1 garlic clove, finely crushed 
- 2 Spring onions, finely sliced 
- 4 tbsp Crème fraiche 
- 2 tsp Extra Virgin Olive Oil 
- 2 tsp Lemon juice 
- Salt and pepper 
- A handful of fresh chives, parsley or dill 
Method:
- Crush the garlic on your board and crush into a paste with a little salt to help it grind. 
- Add the capers, spring onions, cornichons and herbs and chop them finely, or whizz in a food processor. 
- Add olive oil, crème fraiche, salt and pepper and lemon all to taste. If the tartare is too strong you can add more crème fraiche.
