POACHED NECTARINES IN SWEET WINE
Poached Nectarines in Sweet Wine
Serves: 4
Dietary: Vegan, Gluten Free
Ingredients:
- 4 unblemished, not ripe nectrines, peaches or apricots 
- 300mls Moscato sweet white wine 
- sprig rosemary 
Method:
- Wash the nectrines but do not peel. 
- Place the nectrines with the rosemary in saucepan with a lid into which they fit snugly. 
- Add the wine and top up with water to just cover. 
- Put on the lid. Heat up slowly and cook very gently for 20 minutes. 
- Take off the heat, remove the rosemary and leave to cool in the liquid. 
- The nectrines will peel easily, serve whole if small or split in two. 
- The cooking liquid can be reduced down to a light syrup and served with the nectrines.
