Create a getaway holiday for yourself in the beautiful surrounds of Southern France.

We are offering 2 full weeks of world food classes, to help you learn how to spice up your cooking. You can choose which days you would like to attend, or come for a whole week or two of immersive learning.

We will delve deeply into plant-based ways of cooking spicy recipes from around the world. Learn the fundamentals of how to cook with spices and chillies; making your own spice blends and curry pastes, using special techniques for bringing out spice flavour; understanding how to balance flavours of sweet, sour, salty, bitter, umami and hot.

Get to know ingredients such as tamarind, jaggery, lemongrass, lime leaf and galangal, tofu, seaweeds, smoked chillies and fermented foods such as kimchi and miso. Learn how to cook curries, noodle dishes, pancakes, dumplings, wraps and rice rolls, breads, stuffed pastries and much more. We will make the most of seasonal produce, using local markets to buy ingredients.

PROGRAMME:

Monday 2nd September: Mexican Street Food: For chilli lovers, explore a variety of fresh and smoked chillies, from habanero to jalapeño, chipotle to ancho, with dishes such as refried beans, fresh corn tortillas, spicy jackfruit, sweetcorn habanero salsa, chipotle en adobo,

Tuesday 3rd September: Traditional Mexican: Learn traditional dishes such as molé (chocolate infused sauce), tamales (steamed corn wraps) and rice stuffed peppers.

Wednesday 4th September: North Indian: Learn how to temper spices and make a warming dal and a vegan paneer dish, with spiced rice and flatbreads.

Thursday 5th September: South Indian: Learn how to make the traditional street food, with spicy tamarind potatoes, dal, roti and coconut chutney.

Friday 6th September: Indonesian: Experience the complex spicing of Indonesia, learn to make a spice paste for a tamarind pumpkin and peanut curry and a traditional spicy street food rice.

Monday 9th September: Thai: Learn to make the perfect pad Thai noodles, and make a paste from scratch for a spicy coconut curry infused with lime leaf and galangal.

Tuesday 10th September: Malaysian: Learn to make coconut crepes with a tofu stir-fry, served with pickles and sambol.

Wednesday 11th September: Vietnamese: Learn to make jackfruit noodle salad, full of fresh herbs and vegetables, and a coconut turmeric curry, mild and fragrant, infused with lemongrass .

Thursday 12th September: Chinese: We will focus on making Chinese dumplings, learn a variety of fillings and how to make different shaped dumplings, from bao-buns to potstickers.

Friday 13th September: Japanese: Learn to make perfect vegan sushi, with crispy sesame tofu and miso soup.

Each day you will eat what you cook, enjoying the garden and warm weather, we will have a snack brunch at 11am and finish cooking around 2pm to enjoy a late lunch together with local wines, finishing by 3.30pm, leaving you with the late afternoon and evening to relax, enjoy your holiday time and explore the area. You will have use of our pool in the afternoon and you are welcome to stay and relax in the grounds of La Bergerie for the afternoon after the class.
