VEGAN CHOCOLATE COURGETTE CAKE
Vegan Chocolate Courgette Cake
Ingredients:
- 250ml sunflower oil 
- 250g soft brown sugar 
- 150ml water 
- 200ml soya milk 
- 250g plain white flour 
- 250g wholewheat flour 
- 100g cocoa 
- 2 teaspoons baking powder 
- 1 teaspoon bicarbonate of soda 
- 1 teaspoon cinnamon 
- 250g courgettes, grated 
- 1 orange, zest and juice 
Method:
- Sieve the white flour with the cocoa powder, baking powder and bicarbonate of soda into a large bowl. Add the wholewheat flour and mix in. 
- In the cake mixer, blend the sunflower oil, soft brown sugar, water and soya milk until smooth. 
- Add the flour and mix well. 
- Stir in the grated courgettes and orange zest and juice. 
- Bake at 190C for 25minutes, then turn the cake around and cover with baking parchment if they are browning and bake for a further 15-25minutes. 
- The cake is ready when it bounces back when pressed and you can stick in a kebab stick in and it comes out clean.
